Types of Caviar

When it’s up to caviar, Beluga, Imperial ,Ossetra and Sevruga caviar are considered as the most known and expensive caviar due to their increasing demand and rare availability. Generally, caviar is an expensive delicacy which is processed, salted, non fertilized sturgeon roe. The most expensive caviar originates in Caspian Sea which is the largest salt water Sea. Nearly 85% of wild caviar originates from Caspian Sea. In the past, only Russian and Iranian caviar were more popular among the people. However, due to over fishing and pollution, Caspian Sea’s wild sturgeon caviar population and principally Beluga suddenly started to decline, so Beluga sturgeon was tagged as critically endangered by United States Fish and Wildlife Service and banned its fishing. Then 2 years later the five countries sharing Caspian Sea resources have decided to ban sturgeon fishing in Caspian Sea for at least 5 years.

As a result of fishing ban, people were unable to taste Wild Beluga or Ossetra caviar. But now thanks to sturgeon aquaculture farms which paved way to produce farmed sturgeon caviar. Due to important demand, this farm production started to flourish in different parts of the world. Nowadays, farmed sturgeon caviar is produced in France, Italy, Germany, Iran Russia, China, Uruguay and Israel. Farmed sturgeon caviar is same as wild sturgeon caviar but when it’s up to flavor farmed sturgeon can be milder than wild ones. However, farmed sturgeon caviar is considered as safe for health because they are harvested in fresh water sources with rigorous quality control 100% quality control.

Another major difference between farmed and wild sturgeon caviar is their price. Farmed sturgeon caviar is less expensive when comparing with wild ones .When you are thinking about caviar, the first thing that flashes in front of your mind is its expensive price tag. This was one major obstacle which was preventing a large number of people from enjoying its taste. But now, due to increasing production of farmed sturgeon caviar, its price has declined considerably. Now, an average person can also find and taste caviar according to his budget.

Usually, there are 26 different species of sturgeon throughout the world, but only a few sturgeons are harvested for caviar. If you intend to taste the caviar, you need to know more about the different types of caviar since each sturgeon has its own flavor.
